    The sushi omakase restaurant by Chef Choi Ju-yong, nicknamed “The Collector of Natural Products”. With the skills developed in the kitchen under chef Park Kyung-jae at Kojima, the chef finds the best natural ingredients from all over the country and uses them to create exquisite dishes with a flavor that stays true to the basics. The properly aged kohada (Gizzard Shad) sushi is especially popular with a large fan base. He uses the works of artist Heo Sang-wook as plates and pursues a style that combines food and craft.
