Chef Lee Joon creates creative dishes based on three elements: the humanistic characteristics of the Korean way of life, the experiences of ancestors and personal memories, and the food culture that encompasses the mountains, sea, and land. His “Seoul Cuisine” is meant to resemble the city of Seoul, where tradition, modernity, and diverse cultures blend together. The quarterly courses have over 27 episodes, covering topics such as ancient cookbooks, Western art history, terroir, and umami.
